Healthier Banana Bread

(makes 1 loaf)


  • 1/3 cup melted Coconut Oil
  • 1/2 cup local Honey
  • 2 Eggs
  • 3 extra ripe, mashed, medium Bananas
  • 1/4 cup unsweetened Almond Milk
  • 1 tsp Baking Soda
  • 1 tsp real Vanilla Extract
  • 1/2 tsp Kosher or Sea Salt
  • 1/2 tsp ground Cinnamon plus a little more for topping
  • 1 3/4 cup All-Purpose Flour


  1. Preheat oven to 325 and grease a bread loaf pan (I sprayed with Coconut Oil cooking spray).
  2. In a large mixing bowl, beat the oil and honey together.
  3. Add eggs and beat well.
  4. Add in the mashed bananas and milk and beat well.
  5. Add in the baking soda, vanilla extract, salt, and cinnamon and incorporate well.
  6. Sift in the flour, incorporating well but not over-mixing.
  7. Pour the batter into the greased loaf pan and sprinkle with additional cinnamon over the top, swirling into the batter slightly if desired.
  8. Bake for about 50-55 minutes or until a toothpick inserted into the center comes out clean.  Let cool before slicing.

Homemade Georgia Peach Ice Cream

I’m not sure if there are two foods that say summertime quite like creamy homemade ice cream and sweet, juicy peaches.  If you live in Nashville like me, you are very well aware of where to go to get the tastiest, freshest Georgia peaches around…The Peach Truck.  (And if you are not aware, you need to educate yourself ASAP 😉  This is a very quick and easy ice cream recipe and the perfect summertime treat!




  • 3 eggs, beaten
  • 1 3/4 cup sugar
  • 2 1/2 cups peach puree (about 5 fresh peaches, pitted and chopped)
  • 2 cups heavy cream
  • 1 cup half and half
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt


  1. Cream together eggs and sugar.
  2. Puree peaches in blender or food processor and mix into egg/sugar mixture.
  3. Stir in cream, half and half, vanilla, and salt and mix well.
  4. Cover and chill.
  5. Freeze ice cream according to your ice cream maker’s instructions.
